Caramelised red onions are one of my favourite recipes to make when onions are extremely affordable. This recipe is sweet, delicious, and super easy to make. Making this recipe requires a few pantry staples, so it’s cost-effective which is perfect for rising food prices. You can make a large batch and store it in glass jars in the refrigerator for 4 weeks.

Ingredients
6large red onions
1/4cupolive oil
2bay leaves
Salt & pepper to season
Instructions
Peel and chop 6 large onions. Double or triple this recipe as you require. This recipe isn’t difficult, but it can take a while, so I like to make more.
Slice the onions along the grain.
Heat ¼ cup olive oil in a frying pan over medium heat. A skillet works well for this.
Add the onion, bay leaves, salt, and pepper once the oil starts sizzling.
Reduce the heat to low and stir frequently. Cook for 50-60 minutes.
Once the onion has turned sticky and translucent it will be done.
Remove from the heat and store in a glass jar or air-tight container.
Notes
You can use white or brown onions for this recipe.
Don't have olive oil? Try grapeseed oil.
Make a bigger batch because this can be time-consuming. Why not make it worth while.
Store in the fridge in an air-tight container or glass jar.
