Beat the egg, vanilla and sugar in a large mixing bowl with an electric beater until light and fluffy.
Melt the chocolate chips and butter together over a double boiler. Remove the bowl from the heat before the butter is fully melted, and mix until fully combined. The residual heat will continue to melt the ingredients.
Pour the chocolate and butter into the eggs and sugar and beat until fully combined.
Sift in the cocoa powder, flour and salt. Fold into the wet ingredients until just combined. Don't overmix the batter.
Spray a mini muffin tray (24 holes) with non-stick spray. Add 1 ½ tablespoons of batter to each muffin cup.
Bake for 14-16 minutes. Leave them to cool in the muffin tray before removing them.
