White chocolate rocky road is a fun and indulgent treat that’s as colourful as delicious. This no-bake dessert combines creamy white chocolate with soft marshmallows, chewy jelly lollies, and the perfect crunch of shortbread cookies.

Ingredients

600 grams white chocolate block, broken up
250 grams shortbread biscuits chopped
180 grams marshmallows chopped
220 grams jube lollies chopped

Instructions

In a microwave-safe bowl, melt the white chocolate in 30-second increments. Stir in between each cooking time. Reduce to 15-second increments until it is fully melted.
Add the marshmallows, lollies, and shortbread to the melted chocolate.
Mix to coat everything well with the white chocolate.
Pour the mixture into a lined baking dish (I used an 8x8" dish) and press everything down as best you can. Cover and place in the fridge for 3-4 hours or overnight to set.
Remove from the baking dish and cut into chunks.
