Ingredients & Substitutions
The printable recipe card below has the full ingredients list and instructions.
- White chocolate – A few high-quality white chocolate bars will give the best flavour and texture.
- Marshmallows – Mini or small-sized marshmallows work best, but you can chop up larger ones if needed.
- Jelly lollies – These bring a pop of fruity flavour and chewiness. You can use any gummy candy you like, such as jelly babies or gummy bears.
- Shortbread biscuits – These add a buttery crunch to the rocky road. If you don’t have shortbread, use graham crackers.
How To Make White Chocolate Rocky Road
Step 1: In a microwave-safe bowl, melt the white chocolate in 30-second increments. Stir in between each cooking time. Reduce to 15-second increments until it is fully melted.
Step 2: Add the marshmallows, lollies, and shortbread to the melted chocolate.
Step 3: Mix to coat everything well with the white chocolate.
Step 4: Pour the mixture into a lined baking dish (I used an 8×8″ dish) and press everything down as best you can.

How To Store
Refrigerate – Store in an airtight container in a cool, dry place for up to 1 week. If you live in a warm climate, it’s best to keep it in the fridge to prevent the chocolate from melting.
Freeze – For longer storage, freeze the rocky road in a freezer-safe container for up to 6 months. Simply thaw at room temperature before serving.
