Ingredients & Substitutions

The printable recipe card below has the full ingredients list and instructions.

  • All-Purpose Flour – if using self-raising flour, omit the baking powder.
  • Salt – omit the salt if using salted butter.
  • Baking Powder – helps the blondies rise nicely.
  • White Sugar – adds sweetness and a slight crispiness on the edges of the blondies.
  • Brown Sugar – adds sweetness and helps to create a rich, fudgy texture.
  • Vanilla Extract – adds a touch of flavour to the batter.
  • Butter – adds richness and moisture and creates a melt-in-your-mouth texture.
  • Egg – helps bind all the ingredients together. Use a medium or large size egg. Free-range eggs are better.
  • Strawberries – fresh strawberries chopped into small bite-sized pieces. Chopping them into small pieces ensures they are evenly distributed and don’t make the blondies soggy.
  • Icing Sugar – to dust the top after baking.

Step 6: Bake for 25-28 minutes. Allow the blondies to cool completely in the pan before cutting them into pieces. Once cool, dust with icing sugar.

How To Store

At Room Temperature – Store the blondies in an airtight container at room temperature for up to 3 days. Keep them in a cool, dry place to maintain their freshness and prevent the strawberries from becoming overly soft.
Refrigerate – I don’t recommend refrigerating these blondies.
Freeze – To freeze, wrap individual blondies in plastic wrap and place them in a freezer-safe bag or container. They can be frozen for up to 3 months. Thaw them at room temperature or in the fridge before enjoying.
